Green Tea Ice Cream
Green tea ice cream is often served as a dessert in Japanese restaurants. Green tea ice cream is called matcha ice cream in Japan. Matcha is tea powder used in Japanese tea ceremonies.
2 cups heavy cream
2 cups whole milk
8 egg yokes
1/8 teaspoon salt
2/3 cup Sugar
2 Tablespoons Matcha green tea powder
In a large bowl beat the egg yolks with the sugar and salt. Set aside.
In a heavy saucepan, scald the milk. Remove from the heat. Vigorously stir in the Matcha green tea powder. Add heavy cream and bring to a simmer over medium-high heat. Ladle 1/3 of the cream mixture into the eggs and whisk well to combine. Add all the egg mixture to the pot and cook over low heat, stirring, until thick enough to coat the back of a spoon, about 5 minutes.
Cool in the refrigerator, about 2 hours.
Process the mixture in a ice cream maker.
Freeze in ice cream maker, then transfer to an airtight container and put in freezer to harden.
Simple Matcha Green Tea Ice Cream
Let Vanilla ice cream stand until soft (use yogurt, vanilla ice milk or frozen yogurt for weight loss). Mix small amounts of green tea powder into vanilla ice cream and stir it until completely mixed and turns light green. Put ice cream into freezer to make it hard. Top with Chocolate Syrup (optional).
Healthy Matcha Desserts
Try sprinkling Matcha powder over your favorite desserts.
Green Tea Fruit Smoothie
Makes 2 to 4 servings
1 cup regular or low-fat plain yogurt
2 teaspoons matcha powder
1/2 cup chilled green tea
3 cup ripe fruits, cored, peeled, and quartered
4 – 6 ice cubes
Put the yogurt into a small dish and carefully whisk in the matcha powder in small amounts until smooth and fully incorporated.
Put the yogurt mixture into a blender along with the chilled green tea and fruits. Add the ice cubes and blend for 2 to 3 minutes at medium speed, or until the ice is completely crushed and incorporated.
Pour into glasses and serve immediately.
Simple Matcha Green Tea Iced Latte'
Mix 1/2 teaspoon of green tea powderin 2 ozs. of non boiling hot water.
Stir in 3 teaspoons of sugar or adjust to taste.
Ad 4 ounces of milk and stir.
Ad 6 ice cubes or crushed ice.
Matcha Iced Latte Recipes
1 teaspoon (or to taste) matcha
3 teaspoon sugar or 1 tsp honey
1/2 cup hot (not boiling) water
1/2 cup of cold milk*
1 cup of ice cubes
Put matcha into matcha bowl or teapot, add hot water & then sugar or honey. Stir to dissolve matcha preferably with matcha whisk. Pour matcha mix into a tall glass with ice and then fill the glass with milk You may use Soya milk, half & half creamer or other dairy substitute etc
Hot Matcha Latte'
1 teaspoon (or to taste) matcha
3 teaspoon sugar or 1 tsp honey
1/3 cup hot (not boiling) water
2/3 cup warm milk (or Soya milk)
Put matcha into matcha bowl or teapot, add hot water & then sugar or honey. Stir to dissolve, preferably with matcha whisk. Pour matcha mix into a cup, & top with warm milk.
You may use Soya milk, half & half creamer or other dairy substitute etc. You may dissolve easier if you add a little water to matcha first to make a paste & then add the remainder of hot water
Vanilla Cream Matcha Latte'
Two scoops of Vanilla ice cream
1 teaspoon of Matcha powder
1/2 cup milk
1 teaspoon honey (optional - sweeten to taste)
Dissolve Matcha in small amount of hot water and make a paste. Stir Matcha into warm milk. Put Matcha milk solution in a blender at low speed until completely mixed. Next blend in honey. Slowly blend in Vanilla ice cream until desire consistency is obtained. Add milk to thin if desired. Enjoy!
Starbucks Matcha Green Tea Frappuccino

Green Tea Frozen Yogurt
1 teaspoon Matcha green tea powder
2 1/4 cup milk
1/2 cup sugar
1 envelope gelatin
1/8 teaspoon salt
1 1/2 cup plain yogurt
1/4 cup corn syrup
Mix Matcha with 4 tablespoons of warm water until dissolved. Combine the milk, sugar, gelatin, and salt. Let stand 1 minute. Cook over low heat for 5 minutes or until the gelatin dissolves. Let the mixture cool completely. Stir in the green tea, yogurt, and corn syrup. Pour into a bowl; cover and chill for 8 hours. Pour into a ice cream machine and freeze according to manufacturer's instructions.
Matcha Green Sparkler
4 cups warm water
2 teaspoons of Matcha (adjust to taste)
3 cups ginger ale
1 teaspoons honey
2 cups ice cubes
6 fresh mint leaves or lemon slices for garnish (optional)
Instructions: Stir Matcha green tea powder briskly in 4 cups of warm water. Mix warm tea and honey together till combined then mix in ginger ale and ice. Garnish as desired I have found both lemon slices inside the glass or mint on top can both be nice.
Matcha Cafe Au Lait
6 cups steaming-hot low-fat milk
3 cups hot brewed dark roast coffee (New Orleans coffee with chicory is usually recommended by many)
1/2 tsp matcha powder
Instructions: Blend low-fat milk and matcha powder in 2 batches in a blender until frothy (please use caution when blending hot liquids).
Divide coffee among 6 large cups and top off with hot milk.
Also try sprinkling a little Matcha powder over your favorite pastries.
Matcha Hot Chocolate & Cocoa
For a healthy hot chocolate drink - stir in a 1/2 teaspoon of Matcha in your favorite hot chocolate or cocoa drink.
Healthy Matcha Salads, Soups Sauces & Stews
Try sprinkling a little Matcha green tea powder in your favorite soup, stew, sauces, salad dressing or over your salad.
