Green Tea Sauce and Stock Recipes

Green Tea Red Pepper Sauce

1 cup fresh or bottled red bell peppers
1/4 tsp. Matcha green tea powder
4 ozs. hot water
1 oz. of sun dried tomatoes
2 Tbls. of Rice Vinegar
2 Cloves Garlic Peeled
1 Tbls. Virgin Olive Oil
1 tsp. White or Black Pepper

Briskly stir Matcha in hot water until dissolved. Combine all ingredients into a blender and process until smooth. Use immediately or store in sealed container and refrigerate up to one week. Use for topping Noodles, Rice and meat or fish dishes.

Sweet Green Tea Sauce

1/2 teaspoon of Matcha green tea powder
4 ozs. cream
1 Tbls. Honey

Briskly stir Matcha in warm cream. Combine all ingredients into a blender and process until smooth. Use immediately or store in sealed container and refrigerate up to one week. Use for topping ice cream and other deserts.

Spicy Green Tea Sesame Sauce

1 teaspoon of Matcha green tea powder
1 teaspoon white sesame seed
1 green onion thinly sliced
1/4 cup Teriyaki sauce
1 teaspoon sesame oil
1 teaspoon chop chili peppers

Bake sesame seeds on baking sheet at 350F degrees for 5-6 minutes. Occasionally shake until brown. Let cool. Mix seeds and ingredients in bowl. Cover and cool in refrigerator for 30 minutes.

Green Tea Shrimp Sauce

12 ozs. deveined Shrimp
2 teaspoons of Matcha powder
8 ozs. hot water
1 1/2 Tbls. sesame oil
1 Tbl. Sake
1 teaspoon curry powder

Briskly stir Matcha in hot water until dissolved. With a skimmer, remove the prawns from the sauce and put on a warm plate. Let the sauce reduce down until you are left with 150ml. Pour over over steamed and serve immediately with rice or noodles.

Green Tea Cheese Sauce

1 teaspoon of Matcha powder
1 cup cream cheese
1 teaspoon Dijon mustard
1 teaspoon lemon juice
1/4 teaspoon dried dill
3/4 cup milk

Warm Milk and stir in Matcha until blended well. In a double boiler, place the cream cheese over medium heat. When cream cheese has softened, stir in mustard, lemon juice, and optional dill. Slowly pour in green tea milk mix, stirring to thoroughly combine. Add salt and freshly-ground pepper to taste. Serve over steamed asparagus spears or brocoli.

Green Tea Honey Ginger Sauce

1/4 cup green tea made with Matcha green tea powder
2 Tbls. Rice Vinegar
1/2 teaspoon honey
1/2 teaspoon olive oil
2 Tbls. fish sauce
2 minced garlic cloves
1 teaspoon minced ginger root
1 green onion minced

Mix all ingredients in a small bowl. Serve immediately or cover and store in refrigerator for up to one week.

Spicy Cilantro Sauce

1/4 teaspoon of Matcha powder
1/4 cup hot water to make green tea
4 teaspoons lime juice
1/4 cup fresh cilantro
4 minced garlic cloves
2 green onions
4 small chopped & seeded chili peppers
2 teaspoons ground ginger root
1/4 teaspoon fresh ground white pepper
2 Tbls. canola oil
1 Tbls. fish sauce
1 teaspoon honey

Put all ingredients in blended and make a course paste. Use as stir fry sauce or marinade.

Healthy Low Calorie Matcha Frappe'

4 ozs. of warm low fat milk of soy milk
1 teaspoon of Matcha green tea powder
Add sugar substitute to taste
14 ozs. of ice

Blend until smooth, optional – top with cinnamon

All Purpose Green Tea Sauce

3/4 cup hot water
1 teaspoon of Matcha powder
3 tablespoons minced fresh chives
2 tablespoons extra-virgin olive oil
1 tablespoon fresh squeezed lemon juice
1 tablespoon low-sodium soy sauce
1 1/2 teaspoons honey
1 teaspoon fresh minced ginger
1/4 teaspoon minced seeded hot red chile
3 minced garlic cloves
salt to taste

Mix Matcha in hot water well. Add the remaining ingredients to the tea. Cover and chill for 30 minutes. Brush it on pork loin or salmon before baking, use it as a dipping sauce for dumplings, or try it as a salad dressing.

Green Tea Dipping Sauce

1/2 cup chicken stock
1/2 teaspoon of Matcha green tea powder
1 tablespoons minced fresh chives or cilantro
1 tablespoon sesame oil
1/4 cup soy sauce
1 teaspoon fresh minced ginger
1 teaspoon hot bean paste or minced seeded hot red chile
1 Tablespoon minced garlic cloves

Stir all ingrendients together and serve over dumplings.
