Sugar Free Green Tea Banana Bread
1 cup Quaker� Oats (quick or old fashioned, uncooked)
1/2 cup fat-free milk
1/3 cup Island Teas Matcha green tea sugar free Frappe mix or DiabetiSweet green tea mix.
1 cup mashed very ripe bananas (about 3 medium)
1/2 cup liquid egg substitute or 4 egg whites, lightly beaten
1/2 cup vegetable oil
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt (optional)
1/2 teaspoon ground nutmeg
Heat oven to 350�F. Lightly spray bottom only of 9 x 5-inch loaf pan with cooking spray.
In medium bowl, combine oats and milk; mix well. Let stand 10 minutes. Stir in bananas, egg substitute and oil until blended.
In large bowl, combine flour, sugar free green tea mix, baking powder, cinnamon, baking soda, salt and nutmeg; mix well. Add oat mixture to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.) Pour batter into pan.
Bake 55 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 10 minutes. Remove from pan. Cool completely. Store tightly wrapped.
Sugar Free Green Tea Tapioca Pudding
2 cups skim milk
3 tablespoons quick-cooking tapioca
1 egg
1/8 teaspoon salt
2 tablespoons Island Teas Matcha green tea sugar free Frappe mix or DiabetiSweet green tea mix.
1 to 2 teaspoons vanilla
Ground cinnamon and nutmeg
Combine milk, tapioca, egg and salt in medium saucepan. Let stand 5 minutes. Cook over medium-high heat, stirring constantly, until boiling. Remove from heat; stir in Matcha sugar free mix and vanilla.
Spoon mixture into serving dishes; sprinkle lightly with cinnamon and nutmeg. Serve warm, or refrigerate and serve chilled.
Sugar Free Green Tea Spinach Salad
1/2 cup sliced mushrooms
2 slices bacon
1/4 cup finely chopped red onion
1/2 teaspoon cornstarch
1/4 cup apple juice
2 tablespoons cider vinegar
1/2 tablespoon Island Teas Matcha green tea sugar free Frappe mix or DiabetiSweet green tea mix.
1 to 2 hard-cooked eggs, chopped or quartered
3 small red potatoes, unpeeled, cooked, sliced
8 cups lightly packed spinach leaves, torn into bite-size pieces
Salt and pepper, to taste
Combine spinach, potatoes, and mushrooms in salad bowl.
In small skillet cook bacon until crisp; drain well, crumble and reserve.
Discard all but 1 tablespoon bacon fat in skillet; cook onion in fat until tender, 2 to 3 minutes. Mix cornstarch, apple juice and vinegar; add to skillet and heat to boiling. Boil, stirring constantly, until slightly thickened, about 1 minute. Stir in Matcha mix�.
Pour hot dressing over spinach mixture and toss; add hard-cooked egg and reserved bacon and toss. Season to taste with salt and pepper.
Sugar Free Green Tea Smoothie
1 - 2 teaspoons vanilla extract
1 to 1-1/2 cups of non-fat milk or 1/2 cup heavy cream
3 tablespoons Island Teas Matcha green tea sugar free Frappe mix or DiabetiSweet green tea mix.
1 1/2 cups crushed ice
Mix all liquid and Matcha mix ingredients together well. Place ice in blender and pour mixture over the ice. Optional: 1 - 2 diced bananas. Blend medium to high until smooth. Makes two servings.
Sugar Free Green Tea Cookies
1 cup flour
1/2 tsp. baking soda
1 1/2 cup quick oatmeal
1/2 to 3/4 cup Matcha green tea sugar free Frappe mix or DiabetiSweet green tea mix.
1 tsp. vanilla
1 cup raisins
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2 egg whites, slightly beaten
1/2 cup skim milk
1/3 cup oil
1/2 cup nuts
Sift dry ingredients all but oats. Add oats. Add rest of ingredients, mix. Drop by teaspoon on greased cookie sheets. Bake at 375 degrees for 12-15 minutes.
Sugar Free Green Tea Vanilla Ice Cream
1 tsp. unflavored gelatin
2 1/4 cup cold skim milk
1 cup nonfat dry milk
6 tsp Matcha green tea sugar free Frappe mix or DiabetiSweet green tea mix.
2 tsp. vanilla
4 oz. egg substitute
1/8 tsp. almond extract
Sprinkle gelatin over skim milk in a small saucepan and allow gelatin to soften for a few minutes. Stir mixture over low heat until gelatin completely dissolves. Remove from heat and place saucepan in another bowl of cold or ice water to cool to room temperature. Combine remaining ingredients in a blender or food processor and process until well combined. Add milk-gelatin mixture and blend for a few more seconds. Chill in refrigerator until ready to freeze. Blend for a few seconds before pouring mixture through a strainer into the ice cream maker and follow the instructions for freezing. Makes about 1 quart.
Sugar Free Green Tea Whipped Cream Recipe
1 cup heavy cream
1/3 cup Matcha green tea sugar free Frappe mix or DiabetiSweet green tea mix.
1 teaspoon vanilla
Whip cream until almost stiff. Add sugar free Matcha mix and vanilla; beat until cream holds peaks. Spread over top of your favorite sugar free desserts and sweet beverages like our Matcha frappe'.
